When my friends at Twist’d Q sent me their new line of single packet portions of their Crazy Chick Lemon Garlic seasoning I was excited to create something delicious with it. If you love this seasoning, but want a more versatile package to help with portioning, then the new TQ Singles are for you. The goal here is to make it easy for you to cook and create tasty recipes. When I opened the package and tasted the mix of garlic, lemon, oregano, and basil I knew I had to create a hearty chicken dish. This recipe was cooked on my Big Green Egg, but you can easily do this on your stove. What a great idea to pre-portion the seasoning so you don’t have to worry about how much you should be using to prepare your meal. One packet is the perfect amount for one pound of protein.

For this recipe I wanted to tie in the flavors in the seasoning to the rest of the dish. So, I got spinach, lemon, onion, garlic, chicken stock, cannellini beans, heavy cream, and chicken thighs. This sounded like the right mix of vegetables and protein to work with the lemon, garlic, oregano, etc. in the Crazy Chick Lemon Garlic seasoning. Now let’s walk through how to make this dish!

Use 1 packet of the Twist’d Q Crazy Chick Lemon Garlic seasoning to season both sides of the chicken thighs. Preheat the Big Green Egg to 350° and cook the seasoned chicken thighs 4 minutes per side directly over the open coals (NOTE: If you are cooking this on a stove, use a cast iron pan to cook the chicken following the same instructions).

When the skin has beautiful color and is nice and crispy, pull them and let them rest while making the rest of the dish.

Now place your cast iron pan on the grilling surface (or stove) and preheat. Add 1 Tbs of olive oil, then the sliced onions and garlic. Stir and cook for 2 minutes or so until fragrant and the onions are softened.

Add in the remainder of the ingredients stir well then add in the chicken thighs and any accumulated juices on the cutting board. Make sure to season as you go by adding salt and pepper to taste. Let this cook for another 10 – 15 minutes or until the chicken measures 175° using a digital thermometer like the Thermapop. Once the sauce has reduced and thickened, and the chicken is done, you can pull from the grill (or stove) and let rest 5-10 minutes before serving.

Ingredients 

  • 4 bone in skin on chicken thighs
  • 1 packet of Twist'd Q Crazy Chick Lemon Garlic seasoning
  • I can cannellini beans, drained and rinsed
  • 2 cups spinach leaves
  • 1/2 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 1/2 cup chicken stock
  • 1/2 cup heavy cream
  • salt and pepper to taste

Instructions 

  • Set your grill (or oven) to 350ยฐ
  • Grill (or sear in the cast iron) the chicken skin side down for 4 minutes then flip cooking another 4 minutes
  • Set chicken aside and preheat cast iron pan
  • Add 1 Tbs olive oil and then the onions, stir for 1 minute
  • Add the minced garlic and cook another minute or two until fragrant
  • Add the chicken stock, lemon juice, and heavy cream stir
  • Add spinach and cannellini beans then stir
  • Add back in the chicken and any juices that accumulated and let the sauce reduce 10 minutes
  • Serve and enjoy
