When my friends at Twist’d Q sent me some of their new TQ Singles to try, I knew which one I wanted to try first -The Fire Roastin’ Cajun Seasoning! I love the flavors of cayenne pepper, paprika, garlic and onion seared in to a nice protein. Having the convenience of a pre-measured pack that creates the perfect meal every time is a bonus. Twist’d Q Blackened Pork Chops with Mango Salsa

To cool off the blackened pork chops I made a simple salsa featuring roasted corn, mango, red pepper, red onion, cilantro, mint and lemon juice.

A single packet of the Twist’d Q Fire Roastin’ Cajun is the perfect amount for these two thick cut pork loin chops!

Setup your grill to 350° and place a cast iron pan inside to preheat (NOTE: If you do not want to use a grill for this recipe, it can easily be made on your stovetop). Once the pan is preheated, add some neutral oil with a high smoke point (e.g. Grape Seed oil) to the pan and place the chops inside. Add a knob of butter once cooking to add some additional flavor.

After 4 minutes flip the pork chops to the other side.

After the pork chops measure 140° internally, pull them and let them rest for 10 minutes. The carryover cooking will bring them up to a perfect 145°.

As the chops are resting, mix the salsa ingredients together and let sit.

Ingredients
  

  • 2 thick cut loin pork chops
  • 1 packet of Twist'd Q Fire Roastin' Cajun seasoning
  • 1 Tbs butter
  • 1 Tbs grape seed oil
  • 1 Mango chopped
  • 2 ears of corn roasted and corn removed
  • 1/2 red onion finely diced
  • 1 red pepper finely diced
  • 1/2 lemon juiced
  • 1 Tbs cilantro chopped
  • 1 Tbs fresh mint chopped

Instructions
 

  • Rub the pork chops with a little oil and cover with the Twist'd Q seasoning.
  • Preheat cast iron pan to 500°.
  • Add oil to the pan and place pork chops inside.
  • Cook pork chops for 4 minutes and flip, cooking for another 4 minutes.
  • When the pork measures 140° internal, pull and let rest until the temp comes up to 145°.
  • Mix the roasted corn, mango, red onion, red pepper, lemon juice, cilantro and mint together to make the salsa.
  • Serve the pork chops with the salsa on top.
