Life has a funny way of getting in the way of things. Case in point, my daughter is getting married this coming weekend and as a result I have been pretty busy. The planning and prep has taken me away from my cooking and blogging. But hey, I didn’t say life getting in the way was a bad thing! In fact, it is a great thing and I couldn’t be more proud of my daughter and her fiance. This weekend I wanted to focus on my photography so this recipe and associated post was really a set up for me to practice. However, the “practice” dish turned out so well I wanted to share it with you. This was a classic pantry night at the Buddha household featuring ingredients we had on hand for this dish. Shrimp Asparagus Stir Fry
The recipe was simple as I had fresh asparagus, shrimp, ginger, garlic, onions, and carrots on hand. The sauce was easy too, featuring Oyster Sauce, Rice Wine vinegar, and Corn Starch to thicken the sauce. Served over Soba Noodles this stir fry was delicious!
Shrimp Asparagus Stir Fry
Ingredients
- 1.5 Lbs medium shrimp
- 1 bunch of asparagus, peeled and chopped in to 1" pieces
- 4 carrots, diced
- 1/2 white onion, sliced
- 4 green onions, sliced for garnish
- 1 package soba noodles, cooked
- 2 Tbls olive oil
- For the sauce:
- 3 Tbls reduced sodium soy sauce
- 2 Tbls oyster sauce
- 1 Tbls rice wine vinegar
- 1 Tbls brown sugar, packed
- 1 Tbls freshly grated ginger
- 2 cloves garlic, minced
- 1 tsp sesame oil
- 1 tsp cornstarch
- 1 tsp garlic chili sauce
Instructions
- Mix the soy sauce, oyster sauce, vinegar, sugar, ginger, garlic, oil, and cornstarch together and set aside
- Heat the olive oil in a wok or large frying pan over medium high heat
- Add the onions, asparagus, and carrots and stir fry for 5 minutes until bright in color and the onions are translucent
- Add the shrimp and stir fry until opaque and curled
- Add the sauce and stir fry until slightly thick and evenly mixed with vegetables and shrimp
- Add the cooked soba noodles and mix well
- Serve with green onion and sesame seed garnish
