Are you looking for a new sauce to try on your grilled steak?! Well, this recipe for Asian Salsa that my daughter @agranolacoconut came up with is so good you’ll want to put it on everything. Jessica just got married this weekend and I wanted to recreate a dish we did this time last year to celebrate. Let’s see what I did below…
 
Asian Salsa Ingredients:
2 Tbsp soy sauce
1 Tbsp rice vinegar
1 Tbsp sesame oil
1 cup cilantro, chopped
3-4 scallions, chopped
1 Tbsp each grated ginger and garlic
1 chopped jalapeño
½ tsp red pepper flakes

Preheated the @biggreenegg to 250°F setup for 2-zone grilling with the EGGspander. Rubbed 2 @snakeriverfarms ribeye filets with BGE’s Signature Steakhouse seasoning. Placed the seasoned steaks on the indirect side of the grill and let cook while I made the salsa. When the steaks hit 115°F internal, I moved them to the direct side to get a nice crust on each side. When done, I rested the steaks while I grilled some zucchini. Sliced and served with rice and that delicious Asian Salsa.

What do you do when you’re filming and it starts to storm?! Well, all my lighting went down the drain and the wind and rain was an unwelcome distraction. Regardless… I decided not to  give a sh*t… and pushed forward to create this video highlighting the wonderful @snakeriverfarms surf and turf dinner on my @biggreenegg last night. Featuring this American wagyu ribeye rubbed with @firesmoke_bbq Shiitake and these wild Maine lobster tails. So good… you should treat yourself to the ultimate surf and turf soon 😎

Want the serve the best holiday ham this weekend?! Well, you’ve found the right recipe to do just that. Featuring the products in the @heygrillhey Double Smoke Ham kit this @snakeriverfarms Kurobuta ham was delicious. Let’s see what I did…

Rubbed the ham with their Zesty Gold BBQ sauce as a binder. Next covered the ham with their Sugar & Spice seasoning. Placed the seasoned ham in a half aluminum pan with a cup of apple juice to help with moisture. Preheated the @biggreenegg to 250° using hickory wood for the smoke. Place the ham inside and smoked for 2 hours braising every 30 minutes with the juices from the pan. Bumped the temp to 300° and covered the ham with foil for 30 minutes. For the final 30 minutes, I removed the foil and glazed with their Citrus Spice Ham Glaze. When the ham measured 145° internal, I pulled and rested before slicing and serving. One of the best holiday hams I’ve ever made! Thanks Susie and Todd for getting this ham kit to me!

Do you believe me when I tell you that I smoked these ribs indoors? That’s right people… INDOORS. This new @geprofile Smart Indoor Smoker is the coolest new toy in the BBQ world. Setup and use couldn’t be any easier. There is zero smoke in your house when this cooker is in use and only a slight smell. This is the perfect device for people that cannot have a grill or smoker at home. The ribs not only looked good but they had good smoke flavor, were tender, and super juicy. Let’s see how I made the ribs below…
 
Filled the hopper with 2 cups of wood pellets then filled the water bin. Set the Smart Indoor Smoker to the “ribs” setting and preheated to 235°F. To cook the a whole rack of @snakeriverfarms Kurobuta Spare Ribs, I divided the rack in to 3 sections before applying the binder and BBQ rub. When the smoker was ready, I placed the ribs inside and let them cook for 3 hours undisturbed. At the 3 hour mark, I hit the “clear smoke” button which fully cleared the smoke from the chamber in less than 10 minutes. When ready, I was able to access the chamber to flip the ribs and spritz. Back into the smoker for another 2 hours until the ribs were tender and done. I glazed the ribs with some BBQ sauce, sliced, and enjoyed the rack of ribs.
 
So, to recap this device will not replace your outdoor smokers. But, if you live in a condo or some other environment where you cannot use an outdoor grill, this Smart Indoor Smoker is perfect for you. I got decent smoke flavor on the ribs as well as moist and tender meat. Definitely thumbs up from me!!!

You want to make this delicious pork chop recipe don’t you?! Well, I took a recipe from @saltandlavender (one of my favorite food bloggers) and modified it for my @biggreenegg. This recipe is easy to make and packed with creamy goodness. You will definitely want to save and make this recipe again and again. Now let’s see what I did below… 
 
Ingredients
2 @snakeriverfarms Kurobuta bone-in pork chops
2 tsps @lanesbbq Aight Guys AP Rub
1 Tbsp olive oil
1 Tbsp butter
1/2 medium yellow onion, chopped
3/4 cup chicken broth 
1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese, softened
1-2 Tbsp parsley, chopped
 
Instructions
Take the pork chops out of the fridge 15-30 minutes before cooking. Pat them dry and season them with the @lanesbbq Aight Guys AP Rub. Let them sit a room temp while you preheat your @biggreenegg to 400°F setup for raised direct grilling using the EGGspander base. Grill the pork chops for 5 minutes per side until the internal temperature measures 125°F. Pull the pork chops off the Big Green Egg and then rest them on a cutting board. Place a cast iron pan on to the grill grate and let it preheat about 5 minutes. Add the olive oil and butter to the cast iron pan and let the butter melt. Next, add the chopped onions and sauté 5 minutes or so until softened and lightly browned. Add the chicken broth and the Boursin to the skillet. Stir until you’ve got a smooth sauce. Let it bubble for 4-5 minutes, then stir in the chopped parsley. Add the Kurobuta pork chops back in and cook for another 3-5 minutes or until the sauce has thickened up a bit more and the pork chops are cooked through (145°F). Remove from the Big Green Egg, top with more parsley, salt and pepper to taste. Serve and enjoy!
