When the founder of SuckleBusters (Dan Arnold) reached out to me to try some of their products I said yes right away. How could I say no to a company named “SuckleBusters”?! The name originated from a mythical ride Dan’s daddy told him about at the East Texas State Fair when Dan was a little kid. The ride never existed but the name made a lasting impression on Dan. As Dan grew in to a man, his seasoning blend became so popular folks wanted to know what his secret recipe was called and SuckleBuster’s was born!  One thing that stood out right away opening the box from Dan is they offer a “No Bad Stuff” guarantee. All of their rubs and their sauces are all natural and contain no additives or preservatives.  I was drawn to the container of Hog Waller (their top selling rub) and the bottle of their SuckleBusters Original BBQ Sauce (their top selling sauce). I knew right away I was smoking some St. Louis Style Spare Ribs to try both of these on my first cook with SuckleBuster’s products. I could see right away why the Hog Waller rub is so popular! Containing Sea Salt, Turbinado Sugar, Brown Sugar, Chile Peppers, and Spices the color of this rub is beautiful.

After the Spare Ribs were trimmed and covered with Hog Waller, I set the Big Green Egg to 200° using a few chunks of hickory wood.

After 30 minutes I saw that thin blue smoke and the ribs were placed inside.

I let the ribs smoke for 3 hours at 200° before pulling and wrapping the ribs in foil for an hour. After that I turned the temp up to 250° and placed the ribs back in the BGE covered with SuckleBusters Original BBQ Sauce!

After an hour at 250° the spare ribs passed the bend test and were ready to come off the BGE.

Look at the perfect crust these ribs had!!! Both the rub and the sauce worked perfectly for this cook.

First thing I noticed when tasting the ribs was the sweet flavor followed by a slight kick of heat from the chipotle and cayenne peppers. This Hog Waller rub is flipping good!

The SuckleBusters Original BBQ Sauce is a vinegar based BBQ sauce that is Sweet, Tangy, and Spicy. The perfect compliment to St. Louis Style Spare Ribs.

I am not sure if it was the rub, the sauce, the cook, or some combination of the three… but Mrs. Buddha said these were the best ribs she ever had. I’ll take that compliment every day of the week and twice on Sunday!!!
