Yesterday was Cinco De Mayo and we celebrated as we do always… with food! This dinner combined Asian techniques with Tex-Mex influences to come up with a unique dish to celebrate the holiday, Pork “Wok-O’s”! So, grab a Tecate, sit back, and enjoy our recipe for Stir Fry Pork Onion Tacos.

Stir Fry Pork Onion Tacos

We pulled together the ingredients for the marinade: olive oil, garlic, cilantro, limes, ground cumin, chili pepper, and pork tenderloin.

Grabbing the ingredients

Roughly chop the garlic and cilantro and place in the food processor with the rest of the ingredients, then blend it forms a paste.

Slice the pork tenderloin in 2 – 3″ strips.

Mix the strips of pork tenderloin with the marinade. Place in the refrigerator for 8 hours or overnight.

Preheat the Big Green Egg to 500° and place the Lodge Cast Iron Wok on the grilling surface.

Then open a cold beer while the Lodge Cast Iron Wok warms up.

While the Lodge Cast Iron Wok gets heated up, slice a large yellow onion. Once the Wok is ready to go, add cooking oil, the onions, and stir fry.

I poured in some of the beer I was drinking to braise the onions a bit and to add some flavor.

Remove the onions and add the marinated pork tenderloin. Stir Fry this for about 10 minutes.

Pull off the cooked pork tenderloin and toss with the onions. Serve with tortillas, sour cream, avocado, salsa, etc. Enjoy!

Ingredients 

  • ยผ Cup olive oil
  • 6 Cloves garlic
  • 1 bunch of cilantro
  • Juice from 2 limes
  • 1 Tsp ground cumin
  • 1 Tsp chili pepper
  • 2 Lbs pork tenderloin
  • 1 medium yellow onion
  • 1/3 Can of beer, IPA

Instructions 

  • Marinade:
