Shrimp Asparagus Stir Fry

- 1.5 Lbs medium shrimp
- 1 bunch of asparagus peeled and chopped in to 1" pieces
- 4 carrots diced
- 1/2 white onion sliced
- 4 green onions sliced for garnish
- 1 package soba noodles cooked
- 2 Tbls olive oil
- For the sauce:
- 3 Tbls reduced sodium soy sauce
- 2 Tbls oyster sauce
- 1 Tbls rice wine vinegar
- 1 Tbls brown sugar packed
- 1 Tbls freshly grated ginger
- 2 cloves garlic minced
- 1 tsp sesame oil
- 1 tsp cornstarch
- 1 tsp garlic chili sauce
Mix the soy sauce, oyster sauce, vinegar, sugar, ginger, garlic, oil, and cornstarch together and set aside
Heat the olive oil in a wok or large frying pan over medium high heat
Add the onions, asparagus, and carrots and stir fry for 5 minutes until bright in color and the onions are translucent
Add the shrimp and stir fry until opaque and curled
Add the sauce and stir fry until slightly thick and evenly mixed with vegetables and shrimp
Add the cooked soba noodles and mix well
Serve with green onion and sesame seed garnish
