Grilled Bacon Wrapped Vegetables with OXO

Summer is right around the corner and that means grilling season is here! If you have to eat vegetables they may as well be wrapped in bacon right?! This recipe focuses on two of my favorite items to grill: carrots and asparagus. And working with OXO vegetable peelers makes the prep work a snap! The design of their peelers is second to none allowing me to have the vegetables ready without the hassle of a typical peeler that’s uncomfortable to hold. Start by peeling the carrots with the OXO Swivel Peeler. This peeler is my favorite for the cushioned handle that won’t slip even when wet!

Now take the OXO Asparagus Peeler and peel away that tough, woody exterior. The bottom part of asparagus is actually edible if you peel away a few layers. The curved blade helps to hug the round asparagus and remove the peel. This tool is specifically designed for this one task and does it so well. It is even colored green so when you are looking for it, you know this is the peeler for asparagus!

Grill the bacon over medium high heat (350°) to help render some of the fat.

After cooking the bacon 1 – 2 minutes, allow it to cool, then wrap 1 piece around a carrot and 1 piece around a bundle of asparagus spears.

Add some of your favorite BBQ rub to the bacon.

Grill the asparagus bundles and the bacon wrapped carrots over direct heat at 350° for 2 minutes or so per side. When the bacon is browned, the asparagus bright green, and the carrots are bright orange, it is time to remove them from the grill.

Ingredients
  • 1 bunch of asparagus
  • 8 Carrots
  • 10-12 strips of bacon
  • BBQ Rub (to taste)
Instructions
  1. Preheat your grill to medium high 350°
  2. Peel the carrots and asparagus with the OXO peelers
  3. Cook the bacon for 1-2 minutes on the grill direct
  4. Wrap the carrots in a slice of bacon
  5. Divide the asparagus in to bunches and wrap with a slice of bacon
  6. Apply BBQ rub
  7. Cook the bacon wrapped vegetables direct a few minutes per side
  8. Remove and enjoy!
