Farmers Market Smoked Salsa

Ingredients
  • 1 clove garlic
  • 3 poblano peppers
  • 2 limes
  • 1 c cilantro
  • 4 heirloom tomatoes
  • 1 red onion
  • 1 tsp cumin
  • Salt and pepper to taste
Instructions
  1. Set the BGE up for indirect cooking at 250° using hickory wood chunks for smoke
  2. Rub the vegetables with EVO
  3. Smoke the vegetables (garlic, poblano peppers, heirloom tomatoes, red onion) for 2 hours
  4. Add smoked vegetables to a food processor with lime juice, cilantro, and cumin
  5. Mix through
  6. Chill and serve with chips
