This recipe shows you how to make the cherry duck sauce featured in this post.
  • 1 Tbls chilled butter
  • ¼ c finely chopped shallot
  • ½ c chicken broth
  • 8 halved pitted sweet red cherries, fresh or frozen, thawed
  • 2 Tbls tawny Port
  • 1 Tbls honey
  1. Pour off all but 2 Tbls of the duck fat, and place the shallots in the pan until they were translucent.
  2. Add the remaining ingredients and bring it to a boil.
  3. After 10 minutes or so, the sauce will reduce.
  4. Pull off the heat and mix in the cold butter.
